A Winter Warming 

RECIPE 

HEARTY LAMB STEW  

My Favourite on Cold nights 

SERVES 4 (or dinner and lunch for two people)

Cooking Time 35min 

 

INGREDIENTS

500g of Diced Lamb 

1 x Zucchini 

1 X Carrot 

2 X Med Potatoes (or sweet potato) 

1 X Med Eggplant 

3 X Garlic Cloves 

2 X Brown Onions 

1 X Teaspoon of Turmeric, Garam Masala, Coriander, Cumin, Cardamon and Himalaylan or Rock Salt

1 X Tin of Coconut Cream 

 

COOKING TIME

*Chop up the vegetables into small chunks 
*Heat oil in a Large Saucepan 
*Add in Onions and saute 
*Then add the eggplant and garlic
*When the Eggplant changes colour and in all of the spices 
*Mix and smell the aroma of the spices and then add in your Lamb
*When nearly all of the lamb is sealed and has changed colour add all of the vegetables and Water and then mix well
*Fill the pot with water so it just covering the ingredientsand add the lid to the saucepan
*Bring to the Boil and then simmer for 30 min (stirring occasionally)
*Then add in the coconut cream mix well and then Serve & ENJOY
